Tartufo Nero Pregiato Fresco (Tuber Melanosporum Vitt.)
Keep the truffles in the fridge, wrapped them in kitchen paper and stored in a plastic or a glass container. Change the paper whenever it is wet. The truffles have to be washed before use to ensure the conservation and keep their organoleptic properties.

VISUAL FEATURES: A rough, black bark with tiny, poligonal warts; the pulp is dark-violet when it is mature, with thin, white veins that become red in the air and black during the cooking; its spores are dark-brown and oval when mature, they are also spiny, but without cavities. They are collected in groups of 2-3 or 4-6 into the asco.
RIPENING PERIOD: Mid-November – Mid-March
